The hill of Mesudera, in the countryside of the Municipality of Castelsilano (KR), has always been synonymous with excellent olive oil with its dark and stony soil, the typical climate of the Mediterranean area and its particular exposure that looks at the age of the remains of Acerenthia. It is in this place so wild and uncontaminated that the Casale Scola farm produces its extra virgin olive oil in the 15 hectares of olive grove, located at an average altitude of 500 m above sea level, in the heart of the production area of the extra-virgin olive oil from Alto Crotonese PDO, recognized as such by the Ministry of Agriculture and Forestry since 2003. In these lands particularly devoted to this cultivation and rich during the spring and summer of asparagus and wild oregano, natural indicators of local healthiness, our extra virgin olive oil is born, produced by the Carolea and Pennulara cultivars, with its particular and peculiar characteristics of being a delicate, slightly fruity oil, with a color that turns from pale yellow to light green. In this context of territory, the company is creating an agricultural production system that aims to offer the consumer a biologically genuine, chemical-free oil, reducing as much as possible the environmental impact of the agricultural activity and making sure that every piece of land is used in compliance with its natural cycles and therefore in an eco-sustainable way, according to the parameters of modern organic farming to which the Casale Scola company has voluntarily submitted.
Our extra virgin olive oil
Our organic extra virgin olive oil is a food that maintains its organoleptic characteristics even over time. It is obtained from olives harvested by hand, from the beginning of the veraison and not later than December 31st, with cold milling not higher than 25 ° C. carried out within 24/36 hours from the harvest. In the kitchen, our extra virgin olive oil is a very versatile ingredient, to be used both for raw seasoning and to prepare fried food, sauces, marrying well combined with vegetables, boiled vegetables and grilled fish and meat.
